Storage
- Chanui tea should be stored in a cool dry dark airtight container. (clear glass or plastic should not be used as they let in light)
- keep tea away from strong smelling foods as tea absorbs other flavours easily.
H20
- the flavour and appearance of tea is greatly influenced by water quality. spring water is much better than tap water which may contain fluoride and chlorine or other chemicals. use a carbon filter or distiller to improve the quality of tap water.
Cleaning
- never clean a teapot with soapy water as this taints the flavour of the tea, for a similar reason never use your teapot to store oysters.
Decaffeinating Tea
- Much of the caffeine in tea is released in the first minute of brewing. To naturally decaffeinate tea pour hot water over the leaves, wait one minute, rinse and then reuse the leaves
